Whenever I mention this recipe to people, they are incredulous. How can you make cookies without flour? So this is just globs of baked peanut butter? Well, yes, it is. But no one eats peanut butter cookies for the flour. We eat it for the peanut butter!
This EASY 5 ingredient recipe (6 with the optional vanilla extract) is SIMPLE and simply AMAZING. The way the dough falls and cracks look incredible. And the texture and taste of this cookie is sooooo good, you may not want to share them at all. But please do.
Flourless Peanut Butter Cookies
1 cup peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 tsp baking soda
1 egg
1 tsp vanilla extract, optional





Mix ingredients together until well blended. Refrigerate dough for at least an hour.
Preheat oven to 350ºF.
Roll into small balls and place on parchment paper lined cookie sheet.
Bake for about 10-13 minutes depending on size. Balls should collapse, crack and flatten.
Let rest on pan for 5 minutes then gently transfer them to a paper towel. Cookies are delicate until fully cooled.
Variations:
1. Coat the ball in granulated white sugar for a sparkling look and a crisper outside, as shown in the featured photograph on top.
2. Poke a well into the ball and fill with your favorite preserves.
3. Make them into a peanut butter cookie ice cream sandwich. Shown here with a brownie and chocolate web. Too much? Never!
4. Use any nut butter – it’s all good.
